Why keep a bake log

Sourdough changes with the season, the flour and the starter. A log turns each loaf into a note for the next one: if bulk ran two hours over plan at 70°F, the bulk fermentation chart shows why, and the water temperature calculator fixes it next time. Change one thing per bake and write it down. Plan the next bake with the timeline planner.
