Home grain mills for bread

A home grain mill turns wheat, rye or spelt berries into fresh whole grain flour minutes before you mix. Bakers do it for flavour and freshness. Fresh flour absorbs more water and ferments faster than bagged white flour, so plan on more water and shorter fermentation.

Stone mills (Mockmill, KoMo) are the usual choice for bread: fine flour, warm from the stones (the finer the grind, the warmer, says Mockmill's maker). Impact mills are cheaper and louder. In the dough: more water, a rest, faster fermentation; sift out some bran for lighter loaves.

Stone or impact

Stone mills grind between two stones; you can set them from coarse cracked grain to fine flour, and they suit bread well. Mockmill and KoMo are the best-known home stone mills. Impact (micronizer) mills burst the grain at high speed; they are cheaper but loud and less adjustable. Grain berries keep for years, which is part of the appeal.

What fresh flour changes

Whole grain flour holds more water. Our starting point is 5 to 10 percentage points above the recipe's hydration (70% becomes 75 to 80%) and adjust. Bran cuts gluten strands, so loaves are denser unless you sift some out. Fresh flour ferments faster; watch the dough, not the clock, and see baking with fresh-milled flour.

Is it worth it?

If you bake whole grain bread every week and love its flavour, yes. If you bake mostly white loaves, buy good flour instead. Plan storage for the berries and counter space for the mill: measure it with the oven fit checker, which also checks countertop space.

Questions bakers ask

Does fresh milled flour need more water?

Usually yes: whole grain flour absorbs more. We start 5 to 10 percentage points higher and adjust.
